Craison Walnut Cookies from Gail Mattison

 

Craison Walnut Cookies Day 1
1 cup shortening

1/2 cup butter, softened
1 1/3 cups granulated sugar
1 cup packed brown sugar
4 large eggs
2 tsp vanilla
1 tsp lemon juice
3 1/2 cups all purpose flour
3/4 cup quick-cooking oats
2 tsp baking soda
1  1/2 tsp salt
1 tsp cinnamon
4  cups craisons (dried cranberries)
2 cups chopped walnuts

In a mixing bowl, cream shortening, butter, and sugar until light and fluffy.  Add eggs one at a time, beating well after each. Add vanilla and lemon juice.  In another bowl, combine the dry ingredients; add to creamed mixture and mix well.  Stir in craisons and nuts.

Drop by 1/4 cupfuls, 3 inches apart, onto lightly greased baking sheets.  Bake at 350 degrees for 15 to 20 minutes or until lightly browned and center is set.  Cool for 2 minutes before removing to wire racks
