Sweet Potato Souffle

Sweet Potato Souffle from Harriet
Day 20-Souffle
2 cups mashed sweet potatoes
2 eggs beaten
1 1/4 cup sugar
1 1/2 sticks margarine melted and divided in half
1 cup milk
1/2 tsp nutmeg
1/2 tsp cinnamon
3/4 cup crushed cornflakes
1/2 cup brown sugar
1/2 cup chopped pecans

Mix potatoes, eggs, sugar, half of margarine, milk, nutmeg, and cinnamon, pour into greased casserole. Bake at 400 for 20 to 25 mins. Mix corn flakes, brown sugar, nuts, and remaining butter and spread over casserole. Bake for 10 mins more
Serves 10 -12
