Vegetable Medley from Karen Cortell Reisman

Ingredients: 15 Brussels sprouts 8 - 9 garlic pods (optional) 2 medium sized sweet potatoes 1 large onion 1 butter nut squash In a large rectangular Pyrex dish: 1. Remove the skin and cut into chunks -- the sweet potatoes, onion, and butter nut squash. 2. Place all the ingredients in a large rectangular Pyrex dish (spray the dish first with PAM or a bit of oil) 3. Pour some olive oil on top of the mixture and stir around so that most of the ingredients are covered with the oil. 4. Season with salt and pepper to taste. 5. Place in oven at 425 - covered with foil - for 25-30 minutes. 6. Remove cover and bake at 425 for another 30 minutes. |
